BBQ Pals Easy Breezy Cheesy Mushrooms Appetizer

Ingredients:

2 dozen mushrooms (medium to large size)
1 lb sausage (spiced)
8 oz cottage cheese
2 oz grated mozzarella cheese
1/2 tsp of cayenne pepper (optional)
2 tbsp Parmesan cheese (grated)

Peel the skin from the mushrooms and break off the stem. Allow to dry or pat dry with a paper towel and place onto a baking tray. I use baking paper or a silicone grill mat on the tray.
Grill the sausage and cut into small pieces and place into a mixing bowl.
Add all the ingredients (except the Parmesan cheese) and mix well.

Scoop equal portions of the mix and carefully fill each mushroom and sprinkle generously with Parmesan cheese.

Preheat oven (or BBQ) to 250 degrees F.

Cook for 15 to 20 minutes and remove from oven using BBQ Pals silicone grill gloves.
