The following cooking times are dependent on the temperature of your fire. We are assuming that you’ve established some good hot coals burning bright and slowly without large flames leaping high into the griddle or grill.

4-5 minutes:

Boneless (6 ounce) chicken thigh either side
Fish steak (7- 9 ounces) each side
Lamb fillet each side
Mushroom

5-6 minutes:

Hamburger (1 inch thick), renders medium well done
Steak (Rump or sirloin)

6-7 minutes:

Fish (10 ounce)
Courgette (1/4 inch thickness)
Lamb steak (thick) either side

7-8 minutes:

25-30 minutes:

Chicken (quarter) rotate often
Onion half

30 minutes:

Potato (5-6 ounce slices)
Sweet potato

35-45 minutes:

Chicken half, (rotate often)

45-60 mins:

Pork ribs (rotate often)
